Meat Recipes.
Meat has always been very popular in Wales, as these recipes demonstrate so clearly
demonstrate.
The most common sources of meat were traditionally sheep and pigs. Sheep still roam freely not far
outside all Welsh tows and cities, although the Chernobyl disaster rendered many of them inedible for a long time.
Since then they have suffered other onslaughts such as 'blue tongue'. This precisely because they are 'free range'
and so harder to husband.
Most families kept a pig or two too, not so long ago as the vast majority of Wales is covered with
small-holdings.
Beef is there too, but it was probably a little expensive to be eaten on a regular basis. cattle
have also suffered in recent decades with 'foot and mouth' taking
its toll.
