Desserts, Sweets and Puddings.
Unfortunately, desserts and puddings are dying out too ... Well, real desserts and puddings are anyway. What
passes for the course after the main meal usually comes out of the freezer in the form of processed junk food.
I like ice cream a lot, but not what normally passes for it. Or frozen yoghurt or chilled rice pudding in a
small tub.
Dear me! Try one of these recipes. Make enough for a few days, if you like, it'll warm up in a steamer.
A good meal is best finished with a well-made old-fashioned dessert The best meal consists of a non-fatty soup
with fresh bread (toasted, I like); a moderately sized main course with plenty of vegetables and (for me) no more
than 4 ozs meat; followed by a small warm dessert.

A south Wales recipe for poached gooseberries in a rich, creamy individual setting.
- Pastai Afal (Apple Pastry).

In Victorian times, bread-based puddings were regarded as ideal fare for children and for adults with delicate digestions. Monmouth Pudding reveals bold red and white stripes when served.
- Pwdin Reis Cymreig (Welsh Rice Pudding).
This rice pudding is lightened with stiffly beaten egg white and flavoured with nutmeg and a bayleaf.
- Pwdin y Gororau (Welsh Border Pudding).
If the apples are very sour, you may add a little sugar to them.
- Tarten y Gororau (Welsh Border Tart).
This meringue-topped lemon dessert can be served hot or cold.
