Ffagodau Cymreig (Welsh Faggots).

These liver and onion balls are seasoned with sage and baked in stock in the oven.

1 lb. pig's liver 2 medium onions
3 oz shredded suet 4 oz. fresh breadcrumbs
Salt and pepper ½ pint beef stock
1 teaspoon fresh sage     (or ½ teaspoons dry sage)

Set oven to 350°F or Mark 4. Mince the liver and onions together, preferably in a food processor. Put into a bowl and stir in the suet, breadcrumbs, sage and seasoning to taste. Form the mixture into 12 balls with floured hands and place in a well-greased, shallow, ovenproof dish. Pour the stock into the dish. Cover and bake for about 30 minutes. Uncover and continue cooking for a further 10 minutes or so to brown the faggots. Remove the faggots from the dish and keep warm. The remaining gravy may then be thickened with cornflour or gravy granules/powder, if preferred. Serve with creamed potatoes.

Serves 6.
